Looking for smaller pieces for your grill? Ask about yakiniku cuts and their thickness, rather than choosing by marbling alone.
For shabu-shabu, ask for thinly sliced beef. Confirm that the slice style suits your hotpot or sukiyaki recipe.
Ask about wagyu patties, including their weight and ingredients. A patty is a different product from a whole-muscle steak, so compare like for like.
